3 Fall Recipes you’ve got to try!

After seeing a plethora of fall recipes on my for you page on TikTok, I decided to try a couple out and see if they were good. To get into the Fall spirit, I tried a recipe for a pumpkin spice cold brew, pumpkin spice pancakes, and pumpkin spice cake in a mug. I tried to make recipes that I thought would be easy to make and taste like “fall” and some recipes exceeded those expectations while others fell short. After all was said and done, I still think each recipe turned out great and would recommend it to anyone who wants to get into the fall spirit!

Pumpkin spice cold brew

This recipe was really easy to make, easy to customize, and definitely tasted like fall! I ended up putting caramel flavor, hazelnut creamer, and cinnamon in my iced coffee and that combination of flavors really made the drink taste like fall. The beauty of it is that you can add whatever milk, flavor, or spice to make it taste uniquely you!

Ingredients:

  • 1 cup of Iced coffee/cold brew of your choice
  • ½ cup of Milk/cream of your choice (add or reduce depending on how much cream you like in your coffee)
  • ½ teaspoon of cinnamon or pumpkin spice (or both really, its up to you)
  • Flavored syrup of your choice (ex. Hazelnut, caramel, vanilla)
  • Ice
  • 1 tablespoon of pumpkin puree

How to make it

  1. Take your favorite cup and fill it with ice and coffee
  2. In a separate container, mix cream, cinnamon/pumpkin spice, flavored syrup, and pumpkin puree and whip till thick consistency
  3. Add cream mixture to ice and coffee
  4. Stir and enjoy!

Vegan Pumpkin Pancakes/Waffles

So this recipe was a little challenging to make. I think the ingredients were simple and are easily found at a grocery store, but the process wasn’t as simple. In the video, the girl instructed to combine the ingredients in a blender and first of all if you’re dorming it up, you might not have a blender so this recipe may not be for you. But even if you do have a blender the ingredients were so thick that I had to stir them between each blend and it took me way too long to make what should have been a quick and easy breakfast food. It took me even longer to cook them which wasn’t very convenient either. I also didn’t have pumpkin spice so the pancakes didn’t taste super sweet or like fall but the maple syrup saved them so it wasn’t all for nothing. And even though they didn’t taste like fall, they definitely made the house smell like fall so bonus points for that.

Ingredients:

  • 1 cup of rolled oats
  • 1 banana or applesauce
  • ½ cup of pumpkin puree
  • 2 tbsp of maple syrup
  • ½ tsp pumpkin spice
  • ¼ cup of almond milk

How to Make it:

  1. Blend all ingredients listed above
  2. Pour batter into a sauce pan or waffle maker
  3. Cook for 3-4 minutes on each side or until golden
  4. Serve with syrup and other desired toppings
  5. Enjoy!

Pumpkin Cake in a Mug

This recipe was really easy to make but had some ingredients you might not already have on hand like flour or baking powder. All you have to do is combine all the ingredients in a mug, stir, heat in the microwave for 90 seconds max, and enjoy! In the video, the girl used ice cream, whipped cream, and caramel sauce and I didn’t have any of that so I ate it plain and um… you should definitely add toppings or have something to drink with it because I promise you it was thicker than a Popeyes biscuit. Otherwise, it has a cute fall flavor and definitely satisfied my late night sweet tooth cravings. And as a side note, you can make this in whatever size mug you have because it doesn’t make a big serving.

Ingredients:

  • 3 tbsp of flour
  • 1 tbsp of oil
  • 1 ½ tbsp pumpkin puree
  • 1 ½ tbsp maple syrup
  • ½ tsp of pumpkin pie spice or cinnamon
  • ¼ tsp baking powder
  • ½ tsp vanilla extract
  • Pinch of salt

How to Make it:

  1. Take ingredients and combine in a mug of your choice
  2. Microwave for 60 seconds, add 30 more seconds if needed
  3. Add desired topping like ice cream, whip cream, caramel sauce, or enjoy alone!
